Preparation Method

  • Heat a pan with five tablespoon of Idhayam Sesame Oil.
  • Add curry leaves and fry till crisp and keep aside.
  • In the same pan roast mustard, fenugreek, channa dhal, urad dhal, cumin seed  and chilli.
  • Soak tamarind and extract a thick paste.
  • Grind fried curry leaves with the roasted spices and asafoetida.
  • Heat a pan with rest of the Idhayam Sesame Oil, when it becomes hot add the ground curry leaves and fry well.
  • Add tamarind extract, salt and keep it in a medium flame and fry well until the oil separates.
  • Store in  glass bottles.
