Preparation Method :

  • Cut the mangoes into large slices with the skin on.
  • In a pressure cooker, add water and mango slices and cook till the pressure is released once (1 whistle). Remove from heat.
  • When the pressure reduces completely, transfer the mangoes to a bowl and leave to cool.
  • Meanwhile, combine the sugar, rock salt, cumin seeds and mint leaves in a mixy and grind to a coarse paste.
  • Squeeze out the mango pulp and discard the skin and seeds.
  • Puree the pulp in a blender together with the paste till smooth.
  • Transfer to a clean, dry glass bottle and refrigerate.
  • To serve, whisk 4 or 5 teaspoons of mango concentrate into a glass of chilled water and serve immediately.


  • 4 unripe Green Mangoes
  • 100 grams Sugar
  • 2 tablespoons rock salt (sendha namak)
  • 1 teaspoon cumin seeds, lightly roasted
  • Handful of fresh mint leaves
