Preparation Method :

  • Mix the chicken with salt, turmeric powder and hung yogurt for about 1 hour.
  • Boil about 2 liters of water. Add salt, juice of half a lime followed by the rice, and cook till it is half done. Drain and transfer the rice to a flat pan.
  • Heat the oil. Add the peppercorns, bay leaves, anise, cinnamon, cloves and green cardamom.
  • Add the crushed ginger, garlic, and the green chillies. Fry for about a minute, add the sliced onions and fry till they become translucent.
  • Add the tomatoes and salt; fry for about a minute, then add the marinated chicken. Cook till the water dries up and the oil starts to surface.
  • Add a little water and cook the chicken for about 20 - 22 minutes or until tender. When done, Make sure to have about 1 cup gravy.
  • Smear a heavy bottomed pan with oil and put two thirds of the par-boiled rice in it.
  • Place the chicken over the rice. Sprinkle half of the rose water and coriander. Cover with the balance rice.
  • Sprinkle a little water, the balance of rose water, and coriander. Cover with a tight fitting lid and cook for 1-2 minutes on medium- high flame.
  • Simmer to low flame for about 20 minutes or until the rice done. Serve hot.


  • 500 grams long grain rice, rinsed, soaked and drained
  • 1 chicken, cut into 10-12 pieces

  • 175 grams hung yogurt
  • 6 medium sized onions, sliced
  • 4 tomatoes, sliced
  • 1 tablespoon ginger, crushed
  • 1 tablespoon garlic, crushed
  • 9 green chillies, crushed
  • 2 tablespoon rose water
  • A few sprigs of fresh green coriander, chopped
  • 75 ml IDHAYAM sesame oil, mixed
  • Salt, to taste
  • 1 teaspoon peppercorns
  • 1 inch cinnamon stick
  • 4 bay leaves
  • 4 star anise
  • 6 cloves
  • 4 green cardamoms
