CHETTINAD MUTTON BIRYANI

Preparation Method :

  • Mix the drained rice with 1 tablespoon ghee. Set aside for 1 hour.
  • Heat the oil and add the sliced onions along with cardamom, cinnamon, cloves and bayleaf. Fry till the onions turn golden brown.
  • Add the marinated meat. Cook till the contents come to a boil, stirring frequently.
  • When the oil starts to surface add a little water and cook, covered for about 20 - 30 minutes, stirring occasionally till the meat is tender.
  • Add rice, salt and hot water to 1 inch above the surface of meat and rice. Cook, covered on medium and simmer to low flame for about 10 minutes or until the rice is done. Serve hot.

INGREDIENTS

  • 1 kg mutton, cut into medium pieces
  • 500 grams long grain rice 
  • 4 onions, finely sliced
  • 50 ml IDHAYAM sesame oil 
  • 1 tablespoon ghee 
  • Salt, to taste
  • 4 green cardamoms
  • 2, 1 inch cinnamon sticks
  • 1 bay leaf
  • 6 cloves 

Marinate Mutton

  • 1 tablespoon ginger paste 
  • 1 tablespoon garlic paste 
  • 4 tomatoes, chopped 
  • 100 ml yogurt, whisked
  • 12 - 15 green chillies, ground 
  • 100 grams fresh green coriander leaves, chopped
