SUBZI GOSHT BIRYANI

Preparation Method :

  • Heat oil in a large heavy bottomed pan. Fry the onions till golden brown. Remove half and reserve.
  • Add the ginger and garlic paste to the onions and fry for about 1 minute. Add turmeric and red chilli powder and sprinkle a little water.
  • Add mutton and salt, mix and fry on medium-slow flame for about 20 minutes or until the meat is almost done.
  • Add the chopped tomatoes and fry together till the tomatoes blend well with the other ingredients.
  • Add all the vegetables and fry on medium flame for about 5 minutes. Add 1 cup of water and cook on medium-low flame for about 10 minutes or until the meat is tender and vegetables done.
  • Add the grated coconut and mix and keep it on dum.
  • Boil 3 litres of water with salt. When the water starts to boil, add rice and cook for about 5 minutes or until it is half done. Drain the water.
  • Place the rice over the cooked meat, which is simmering on dum. Sprinkle the reserved onions and the chopped coriander.
  • Sprinkle the lime juice. Cover and cook on dum for about 10 - 15 minutes or until the rice is done and steaming. Serve hot.

INGREDIENTS

  • 750 grams long grain rice, rinsed, soaked and drained
  • 1 kg mutton, cut into medium sized pieces, washed and drained
  • 250 grams onions, finely sliced
  • 150 ml Cooking oil
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 30 grams fresh coconut, grated
  • ½ teaspoon turmeric powder
  • 2 teaspoon red chilli powder
  • A few sprigs of fresh green coriander, chopped
  • Juice of 2 limes
  • Salt, to taste
  • 120 grams tomatoes, chopped
  • 250 grams potatoes, cut into medium-large sized pieces
  • 150 grams fresh fenugreek, chopped
  • 150 grams french beans, cut into medium sized pieces
  • 150 grams soya, chopped
