Preparation Method :

  • Heat the oil and add the onions and fry till golden brown. Then add the ground paste and fry for about 5-6 minutes.
  • Add the chopped tomatoes, and mix and fry till it blends with the paste.
  • Add the yogurt and stir continuously till the contents come to a boil. Thereafter cook it for another minute.
  • Add the vegetables and salt, and mix and cook on medium flame for about 5 minutes. Set it aside.
  • Take a heavy bottomed pan. Place the previously soaked rice in it and add hot water till it reaches just about 1 inch above the surface of rice.
  • Add salt and cook for about 5 minutes till it is half done. Add the vegetables to it and mix.
  • Cook covered on slow flame for about 6-7 minutes till the rice and vegetables are done.
  • Add half of the croutons and mix gently with the rice. Serve hot, garnished with the remaining croutons.


  • 750 grams long grain rice        
  • 250 grams cauliflower, cut into medium sized florets, washed and drained  
  • 250 grams knol kol, cut into medium sized pieces, washed and drained
  • 250 grams onions
  • 250 grams carrots, cut into 1 inch batons, washed and drained    
  • 250 grams beans, cut into 1 inch batons, washed and drained
  • 75 grams tomatoes, chopped    
  • 200 grams yogurt, whisked
  • Croutons from 4 slices of bread, each cut into 12 pieces and fried golden brown    
  • 150 ml Cooking oil
  • Salt, to taste

Ground to a fine Paste

  • 1 teaspoon cumin seeds    
  • 1 tablespoon fennel seeds    
  • 2 inch piece ginger    
  • 9 garlic cloves    
  • ½ grated coconut
  • 75 grams fresh green coriander, chopped    
  • 30 grams mint leaves    
  • 9 green chillies, chopped
  • 1 inch cinnamon stick
  • 2 star anise
