Preparation Method :

  • Grind the rice and dhal separately to make a smooth paste. Use water to facilitate the grinding.
  • Mix the batters in a bowl. Stir in salt.
  • The batter should not be too thick or too watery. It should have the consistency of a fluffy mix.
  • Mix both batters together with hand to facilitate fermentation.
  • Cover and set aside for about 6-8 hours. Do not stir it.
  • Fill an idli rack with water. When the water boils, place the perforated idli plate covered with a cloth in the rack. Fill each mould with idli batter. Cover and steam for about 5 minutes.
  • Cook the remaining idli in the same way and serve with Sāmbhar and chutney.


  • 300 grams parboiled or idli rice, rinsed, soaked and drained
  • 75 grams urad dhal, rinsed, soaked and drained
  • Salt, to taste
