Preparation Method :

  • Pour the milk into a heavy-based saucepan, bring to the boil, uncovered and reduce the heat to medium.
  • Leave the milk to boil, stir occasionally to break the skin forming on top. Continue to do this until the milk is reduced to about a third of its original volume.
  • Leave to cool, then add the sugar and mango pulp and blend everything well together.
  • Pour the mixture into containers , cover tightly and place in the freezer.
  • After about an hour return to the freezer with a spoon every 15 -20 minutes and stir the mixture to break any ice crystals forming.
  • Continue to do this until the kulfi is almost set. Remove from the freezer and leave at room temperature for 15 minutes to soften before serving with mango slices.


  • 200 grams mango pulp
  • 2 litres full-fat milk 
  • Mango slices to serve
  • 200 grams caster sugar
