Preparation Method :

  • Add the measured water to the sugar and bring to the boil. Remove the scum. Boil till it becomes a syrup of one-string consistency.
  • Remove from the heat and add the saffron and powdered cardamoms. Set aside.
  • Add enough water to the Bengal gram flour to make a thick batter of dropping consistency.
  • Heat oil. Drop a ladleful of the batter through a skimmer with pea-sized holes. Fry till uniformly golden and crisp. Add to the sugar syrup.
  • Fry the cashewnuts and raisins in 2 tablespoon ghee and add to the laddu mixture.
  • Add the sugar candy, mix well and cool. Shape into balls.

INGREDIENTS

  • 475 grams sugar
  • A few saffron strands
  • 2 green cardamoms, powdered
  • 350 grams Bengal gram flour
  • IDHAYAM MANTRA peanut Oil for deep frying
  • 10 cashew nuts, chopped into small pieces
  • 10 seedless raisins
  • 25 grams ghee
