CARROT-CASHEW PAYASAM

Cooking Time :
40 minutes

Preparation Method :

  • Soak the cashew nuts in 1 cup warm milk for half an hour.
  • Boil the milk in a heavy-bottomed pan. Keep stirring till it reduces to half.
  • Fry the grated carrot in ghee for about 5 minutes.
  • Grind to a coarse paste the soaked cashewnuts and the fried carrot.
  • Add to the milk. Mix in the sugar and simmer till ingredients are well blended.
  • Stir in the crushed cardamoms.                           
  • Serve chilled.

 

INGREDIENTS

  • 75 grams cashew nuts
  • 200 ml warm milk for soaking the cashew nuts
  • 1½ litres milk
  • 500 grams grated carrot
  • 2 tablespoon ghee
  • 100 grams sugar
  • 6 green cardamoms, crushed
