INDIAN RICE PUDDING

Preparation Method :

  • Place the rice and 1 litre of the milk in a heavy-based pan. Cook gently for about 30-45 minutes or until most of the milk has been absorbed.
  • Add the remaining milk and the sultanas, stir well and continue cooking until thickened. Remove from the heat and add sugar to taste.
  • Leave until completely cold, stirring occasionally to prevent a skin forming, then stir in the cream.
  • Turn into small dishes and serve cold, sprinkled with crushed cardamom seeds and rose petals.

INGREDIENTS

  • 1.5 litres milk
  • 150 ml single cream
  • 100 grams long-grain rice
  • 50 grams sultanas
  • Castor sugar, to taste
  • Lightly crushed cardamom seeds
  • Rose petals, to decorate
