PLUM PUDDING

Preparation Method :

  • In a large saucepan combine butter, sugar, milk, dates, raisins, currants, mixed fruit peel and rind of orange. Bring to a boil.
  • Remove from heat and stir in the baking soda.
  • Sift flour, cinnamon and salt. Add to the dry fruits and mix gently until blended.
  • Pour mixture into greased pudding mould. Cover with a double layer of greased wax paper or aluminium foil and steam for 2 hours.

INGREDIENTS

  • 50 grams salted butter
  • 100 grams brown sugar
  • 200 ml milk
  • 12 dates-pitted and chopped
  • 100 grams raisins
  • 50 grams dried currants
  • 50 grams candied mixed fruit peel - chopped
  • 1 tablespoon orange rind
  • 1 teaspoon baking soda
  • 200 grams flour
  • 2 teaspoon ground cinnamon
  • A pinch salt
