Preparation Method :

  • Boil the milk and raisins in a heavy-based pan. Add the drained rice and cook, stirring for about 10 minutes or until the grains start to plump up.
  • Simmer to low flame and cook for about 20-25 minutes or until the rice is tender. Keep stirring.
  • Add the cardamom, sugar, ground almonds and essence. Cook for another 8-10 minutes, break up the rice with the back of the spoon.
  • The pudding should have thick custard consistency.
  • Allow to cool and refrigerate for few hours. Garnish with the nuts and serve chilled.


  • 75 grams long-grained white rice, washed, soaked and drained
  • 1.5 litres semi-skimmed milk
  • 3-5 green cardamom pods, seeds removed and ground
  • 2 tablespoon ground almonds
  • Few drops of rose essence
  • 1 tablespoon raisins
  • Sugar to taste
  • 25 grams chopped almonds and pistachio nuts, to garnish
