TAPIOCA PUDDING

Preparation Time :
1 hour 10 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Soak the tapioca in warm water for at least an hour so the grains swell, Drain and keep it aside.
  • Put the measured water in a pan and bring to the boil. Stir in the sugar and salt.
  • Add the tapioca and coconut milk and simmer for 10-12 minutes or until the tapioca turns transparent.
  • Serve warm with some tropical fruits and decorate with the finely shredded lime rind.

INGREDIENTS

  • 150 grams tapioca
  • 500 ml water
  • 175 grams granulated sugar
  • Pinch of salt
  • 250 ml coconut milk
  • 250 grams prepared tropical fruits
  • Finely shredded rind of 1 lime, to decorate
