ZARDA RICE

Preparation Method :

  • Soak the Basmati Rice in water for 2 hours. Heat water in a pan and add 2 cloves, 2 cardamoms, sweet attar and lemon juice. Add soaked rice and cook rice till done.
  • Make a sugar syrup of one string consistency and keep aside.
  • Add rice to sugar syrup and add khoya on top.
  • Put 1 cup melted ghee on rice. Cook on dum for 25 minutes.
  • Heat ½ cup ghee in a pan, crackle 3 cloves, 3 cardamoms and temper the rice.
  • Remove the rice in a serving dish, garnish with the soaked Kesar, dry coconut and Silver leaves.

INGREDIENTS

  • 500 grams Basmati rice
  • 300 grams Sugar
  • 150 grams Khoya
  • A pinch of Zarda(Saffron) soaked in hot milk
  • 5 cloves
  • 5 cardamoms
  • 3 drops sweet attar
  • 2 teaspoon lemon juice
  • 250 grams Ghee
  • 50 grams dry grated coconut
  • 50 grams Raisins
  • 800 ml water for the sugar syrup
  • 2-3 silver leaves
