KAJU KATLI

Preparation Method :

  • Soak cashew nuts in water for an hour.
  • Drain and grind the soaked cashew into a fine paste on a grinding stone or mixie.
  • Heat a pan, add the cashew paste, sugar and cook in a medium heat.
  • When the mixture becomes thick, reduce heat and stir continuously until it leaves the sides of the pan and add rose essence.
  • Transfer it onto a greased marble or wooden surface.
  • Immediately roll thinly (with 5 mm thickness) with a ghee greased roller pin.
  • Spread silver flakes over it and cut into a desired shape but most common shape is diamond.

INGREDIENTS

  • 500 grams Cashew nuts
  • 200 grams Sugar
  • 2 teaspoon Ghee
  • 4-5 drops of Rose essence
  • 2-4 leaves of Silver flakes
