KESAR SANDESH

Preparation Method :

  • Boil milk in a heavy-bottomed pan and add lime juice and stir continuously.
  • Milk will curdle and water will separate. Stir continuously to avoid burning at the bottom until the water completely separates. Remove from heat.
  • Collect paneer and transfer it to a muslin cloth, tie hard and hand for 30 minutes for straining the remaining water.
  • Then immerse the solids into water and wash gently to remove the sour taste of lemon.
  • After a 1 minute, squeeze out excess water and place it in a bowl and knead gently to soften it.
  • Add sugar, crushed cardamom and saffron milk to paneer and mix well.
  • Transfer paneer to a nonstick pan and cook for 10 minutes by continuous stirring.
  • Collect this mixture in a bowl. Divide the mixture into 10 equal portions and plate.
  • Garnish with slivered pistachios and saffron and serve when it cools to room temperature.

INGREDIENTS

  • 1 ½ liters full cream Milk
  • 50 ml Lime juice
  • 100 grams Sugar
  • ½ teaspoon Crushed green Cardamom
  • A few saffron strands dissolved in 2 tablespoons warm milk

To garnish:

  • 1 tablespoon Pistachios cut into slivers
  • A few saffron strands
