Preparation Method :

  • Cook the lentils and turmeric with water in a pan for about 10 -15 minutes or until cooked but not mushy.
  • Heat the oil in a frying pan and fry all the ingredients except the lemon juice.
  • Cook until the courgettes are nearly tender.
  • Fold in the drained lentils and the lemon juice. If the dish is too dry add some hot water. Reheat and serve hot .


  • 150 grams mung dhal 
  • 250 grams courgettes ,cut into wedges
  • 60 ml Cooking oil
  • 1 large onion, finely sliced
  • 3 garlic cloves, crushed
  • 3 fresh green chillies, chopped
  • 250 grams chopped tomatoes
  • ½ teaspoon mustard seeds
  • ½ teaspoon granulated sugar
  • ½ teaspoon cumin seeds
  • ¼ teaspoon asafetida
  • ½ teaspoon ground turmeric 
  • 50 ml lemon juice
  • Few fresh coriander (cilantro) and mint leaves, chopped 
  • 6 curry leaves
  • Salt, to taste
