Preparation Method :

  • Heat the oil in a large heavy pan and fry the garlic and onion over a medium heat until golden. Stir in the lentils, continuing to stir until they have absorbed the oil.
  • Pour the boiling water over them and simmer for 1 hour, or until the lentils are soft.
  • Meanwhile cream the butter with a wooden spoon and beat in the parsley, a squeeze of lemon juice and a little salt to taste. Chill until firm.
  • Season the lentils with salt and pepper to taste. Stir in a little parsley butter.
  • Serve with a good knob of butter on top as a garnish.


  • 4 tablespoons Cooking oil
  • 2 clove garlic, crushed 
  • 2 small onion, finely chopped 
  • 200 gram orange lentils 
  • 800 ml boiling water 
  • Salt and freshly ground pepper

Parsley Butter :

  • 100 gram softened butter
  • 2 tablespoon finely chopped
  • Parsley lemon juice
