Preparation Method :

  • Mix the besan and the maida together.
  • Heat the ghee in a pan.
  • Add the maida and roast on low heat until it is golden in color.
  • Cool a little and keep stirring occasionally.
  • Make syrup of sugar, water, milk and saffron strands.
  • Pour this sugar syrup into the maida mixture.
  • Beat it well with a large fork until the mixture makes thread like flakes.
  • Transfer all the mixture into a greased surface and then roll it into one inch thickness.
  • Add the cardamom seeds and melon seeds. Push it down with the help of your palms.
  • Cut the flattened mixture into one inch squares when cool.
  • Wrap all the pieces separately with a thin polythene sheet.
  • Store the soan papdis in a sealed container.


  • 300 grams Besan Flour
  • 250 grams Maida
  • 2 tablespoon Milk
  • 200 grams Sugar
  • ½ teaspoon Cardamom Seeds
  • 2 teaspoon Dried Melon Seeds
  • 1 Sliver warq
  • 250 grams Ghee
