Preparation Method

  • Soak the rice for ten minutes and drain it completely.
  • Dice carrot and beans.
  • Chop the onions lengthwise, finely.
  • Grate the coconut and extract the milk.
  • Grind together chilli, cloves, cinnamon, cardamom to a fine paste.
  • Heat a heavy bottomed pan with ghee and Idhayam Sesame Oil.
  • Saute onions till translucent.
  • Add mint leaves, coriander leaves and fry well.
  • To this add the ground masala and fry till the raw smell goes.
  • Add the diced vegetables, peas and fry for five minutes.
  • To this add the rice simmer and fry in a low flame for three minutes.
  • Combine two cups of water and two cups of coconut ectract.
  • Pour this mixture to the rice mixture.
  • Add tumeric powder, salt and close with a lid.
  • When the rice is done. Remove from fire and serve hot with Rahitha.
