Preparation Method

  • Heat a dosa pan with a tablespoon of Idhayam Sesame Oil.
  • Flip the parotta, keep it in a low flame and fry both the sides till  brown and crisp.
  • Allow it to cool.
  • Chop  the parottas  into very small pieces.
  • Chop the onions finely.
  • Deseed the capsicums and cut it strips..
  • Crush the garlic with the skin.
  • Slit the green chillies.
  • Chop the carrots, spring onion and ginger finely.
  • Heat a broad pan with the rest of the oil
  • Add the garlic and fry till golden brown.
  • Saute  ginger and onion.
  • Toss the capsicum.
  • To this add chilli powder, garam masala, sambar powder and mix well.
  • Add chilli sauce and salt.
  • Simmer to a low flame, add the parottas and fry well until everything blends together.
  • Set to a high flame. Add coriander leaves, chopped carrots, spring onions and fry.
  • Serve hot.
