Preparation Method

  • Hard boil eggs and shell them.
  • Slit the eggs.
  • Soak the tamarind and extract it.
  • Dice onion, tomato and green chillies.
  • Dry roast, fenugreek, cumin seed and pound it.
  • Split the red chillies.
  • Heat a pan with Idhayam sesame oil, flip the eggs and fry till golden brown and keep aside.
  • In the same oil, temper mustard, when it splutters add onion, green chillies, red chillies, turmeric powder, curry leaves, garlic and fry.
  • Add coriander powder, chilli powder, tomatoes and fry well until the oil leaves the sides.
  • Pour the tamarind extract, salt and allow it to boil.
  • When the gravy thickens add the fried eggs, pound spices and remove from fire.
  • Serve hot.
