Preparation Method

  • Wash the brinjals. Remove the stem and slit the brinjals into four.
  • Grind together amchur powder, chilli powder, turmeric powder, green chilli, coriander powder, onion, garlic, ginger and salt.
  • Stuff the brinjals with the ground masala.
  • Heat a non stick pan with two tablespoon of ghee, arrange the brinjals and close it tightly with a lid.
  • Stir it  often.
  • When the brinjals are done and the masala coats the brinjals, remove from fire and serve.
