Preparation Method

  • Parboil colocasia. Peel the skin and chop it lengthwise.
  • Heat a pan with Idhayam sesame oil.
  • When it becomes hot, deep fry the colocasia till crisp and golden brown.
  • Chop the big onions and tomatoes lengthwise, finely.
  • Grind together green chillies, ginger, garlic, fennel and coriander powder.
  • Heat a pan with three tablespoon of Idhayam sesame oil.
  • Saute onion and tomatoes till reddish brown.
  • Add the ground masala till the raw smell goes.
  • Add salt and squeeze lemon juice.
  • When the masala is fried well, add the crispy fried colocasia, chilli powder and garam masala powder.
  • Simmer to a low flame and fry until the masala coats the colocasia and turns to reddish brown.
  • Sprinkle coriander leaves.
  • Remove from fire.
  • Serve it along with lemon rice, chana pulao and curd rice.
