Preparation Method

  • Can prepare carrot rice in any of the following rice varieties basmati rice, samba rice or raw rice.
  • Grate the coconut, extract milk.
  • Par boil rice along with coconut extract and salt.
  • [One cup of water and a cup of coconut extract can be added to cook rice]
  • Par boil moong dhal and keep aside. Cook peas.
  • Grind together ginger and green chillies.
  • Heat a heavy bottomed pan with Idhayam Sesame Oil.
  • Temper cumin, when it sizzles, add curry leaves, red chillies, ginger – garlic paste and fry well.
  • Add the grated carrot.
  • Simmer to a low flame.
  • Pour tomato juice.
  • Add peas, moong dhal, coriander leaves and stir well.
  • Add the cooked rice and simmer to a low flame.
  • Roast cashew nuts in ghee and add it to the rice.
  • Remove from fire and serve.
